    Most kits have a starting sg at 1080 or 1090. Good stiring is needed to get a goog starting sg reading. If you use an f-pack or extra berries be shure they have extracted the sugar if you want to know the right sg.

    The fruit coctaile is ok. No problem. Maybe better for 2 gallons than 3. If you have more berries bring it on. Try to get maybe 1200 gr more of blueberries. It will give the wine more body and not change the profile too much. Pectic enzyme is a needed friend.

    This is nothing to worry about. It is probably co2. And if it was air/oxygen, the amount is too small to harm the wine. You have more air over the surface than in these small bubbles, and that is also no problem when its up in the neck where the surface is small.

    I agree. Both the grapefruit zest and the berries i introduce in the primary, but I put them in after or the end of the most frenetic fermentation. Day 4 or 5 normally. That keeps the freshness of the additives and still makes them well integrated.

    Clear Bottles For Red Wine

    I agree with the answers already given. If you drink your wine not too long after taking it out of the dark storing room there is no problem. Commersial red wines in almost clear bottles are wines that are meant to be drank young.
