    Why do you refer to 3 gallon stuff for dessert wine a dessert wine is just sweeter than most. I had a sautern many years ago in the region of france i about threw up it was sweeter than raw honey.

    Fixing VERY tart wine

    No matter what you do to your wine the alcohol level will stay the same. Watering it down will. I have never tried refermenting. Your main problem is acidity, try taking a sample and adding a little chalk, calcium carbonate, if after settling it tastes ok do the same to the big batch.

    I only use frozen blueberries for my recipe 2lb to a gallon but frozen or pureed a lb is a lb so if my math is correct yes you are short about 2lb. Good luck. You will also need to add some sugar to get your alcohol up.

    Bentonite is nothing more than a type of clay.. i dissolve it with cold water or some of your wine and pour in to the main batch. It can take a while for it to settle. Have you tried isinglass, used it last week my wine is almost clear. And you dont use much.

    I remember bottling thousands off gallons of chateauneuf-du-pape in england shipped in from france.i didnt like it too much i found it earthy but hay everyones taste is different.

    The oxide will grow even more when in contact with sulfides ie metabi sulfide.

    I know what you mean when i worked in the wine industry in england i had to crawl inti a 30,000 gal tank to clean once cleaned and rinsed then the steam went to it.after 30mins it was sterile and ready for wine

    That black substance is iron oxide you may think of it as a form of rust, not good for wine or beer, you might want to consider plastic handled brushes.
