    Mustang wine help

Here I am 2 years later I’ve been drinking the mustang wine and a mead I made that year. It’s true what they say gets better with time. It is phenomenal. Good luck to all new guys just know you are in for the long haul but at the end you will have something priceless that you cannot buy at the...

    Racking

This mead I’m drinking is the best home brew wine I’ve ever made. No sulfites added about six months between racking. All my wines before that were crap and I added sulfites I’m not anti sulfite but tons of wine was made without sanitizer or sulfite and everyone got buzzed for years and years.

    Grapefruit wine/ citrus help.

Maybe the case I added to much sulfites. I would add some 5 tablets per 5 gallons then about 3 months later add 5 more then bottle. For the sugar everything I made with that taste like rocket fuel. I may try using a lower gravity yeast and see if this helps. Any other thoughts are...

    Grapefruit wine/ citrus help.

I have a bunch of grapefruits I’d like to ferment them but all recipes I’ve seen call for sugar and honestly I’m not a fan of wines that had added granulated sugar. I’ve made a couple with and a couple without and the wines without are always better. Is it a pretty straight forward ferment...

similar off taste in all batches?

Storage was glass carboys in a closet in my house 70-75 degrees. It’s been so long and I do not remember exact nutrient regime but I followed some mead recipes I added the nutrients. The carboys I mostly used in the airlocks bisulfite water but sometimes topped off with regular water. I used...

similar off taste in all batches?

No I absolutely appreciate the questions and the attempt to help. I do have potassium sorbate but I don’t think I used it. They all fermented to less than 1 sg or about that. The geraniums thing has me worried but I have no idea what geraniums smell like. I used llavin 77b on all batches I put 5...

similar off taste in all batches?

Probably the most vague description given but last September-October I made some mustang wine 3 different batches and two different 5 gallon batches of mead. I recently bottled it and I tried each when I was bottling. They all had this kind of strong "off" taste to them. A few days after...

Anyone got a pear and fig recipe.

I have an abundance of pear and figs does anyone have a recipe for them I would like to avoid adding sugar. If sugar would be required I’d rather use honey. Simple is best. Just curious on lbs I would need to avoid sugar adding and a good dry package yeast to use. I’m good on general process...

    Mustang wine help

Probably talking to myself but it’s been about 6 months since I made a few batches of mustang wine and between the rocket fuel flavor the added sugar gives along with the tartness from the mustang I will have no problem letting this bottle age for a year or longer!

    Cool find

Waders never seem to last me more than a year so I'm hoping keeping inside will prolong the life. so they don't spring a leak. Probably wishful thinking.

    Cool find

Ya I live in South Texas so those are my winter waders haha. Not much fly fishing but do a lot of top waters in the salt. Fruit trees are great and winter is actually best time to plant because the trees are dormant and it doesn’t stress them out unlike disrupting them in spring to transplant...

    Cool find

I should add I ordered quite a few peach trees, miscadines, and black berry plants from Ison’s nursery to this property blooming. Hopefully In a couple years those carboys will be full of home grown muscadines and black berry wine

    Cool find

Roof is only 5 years old. We did reno inside. But the carboys have foil over openings and are clean other than the dust on the top outside sides and insides are clean. Got my own brew haus

    What is it?

Its been awhile since I've been on been busy moving houses, work, and kids. I have 20 gallons of muscadine wine and this is the only carboy with this stuff at the top. after the first months racking I haven't racked any of it even once. I plan on doing it soon as in this week. I made the stuff...

    What is it?

It's not fuzzy but it is concerning me I've never seen tartaric acid crystals maybe that's what it is?

    What next

I've made three five gallon batches of wild mustang grape wine in early July it went through fermentation in a barrel about a week I squeezed juices added sugar fermented again in carboy 3 weeks then racked again and topped off carboys. Should I treat with campden and sulfite soon or just let it...

    Thick Mustang

Glad to see some others with apparently more experience than myself at mustang wine I hope you post more about your process. I read the slime is fairly typical. I had the same slime however this was my first time making wine and mustang wine specifically.
