    I made a chamblaise kit and split it into 2 primaries, one I made as instructed and 1 with the amoretti 2 T passion fruit, 2T guava and 1t blood orange, absolutely amazing! Can't wait to add some blackberry to a red kit and start experimenting some more.

    Do you bottle age, I thought you like to bulk age in carboy? Do you find a significant difference in bulk aging as opposed to letting it age in bottles? My whites I always just bottle when the kit is done but I figured I'd need to bulk age reds to get those layers of flavor and nose in there.

    I've never heard of adding gas. I wouldn't know how to do that, is there a thread on this? I was planning on bulk aging for 6 months, I have heard of racking every 3 months, should I add k meta at each racking and bottling? The wine is young but it tastes great!

    I made the mango mai tai last yr, very good and this year making the peach bellini also smells great. I have another mango mai tai I'll make this month. I boosted ABV to SG 1.085 on both by adding sugar and added 1/2 f pack in primary. These are a hit poolside in the summer.

    I looked back on my notes, I made it to 5gal, added tannin too. It's too far below the top from the first rack so I need to top it up with a bottle of cab sauv to bulk age it, would you add sulphate at any point during aging or just before bottling?

The fermentation in the primary takes longer, instead of 7 days now it's more like 9 to 12 days, but I'm told...
