    My Rhubarb Haul

I have rhubarb available and usually make 2 6 gallon batches a year. 12-15 lbs per batch. Cut into 4inch chunks and freeze. Thaw and ferment it in a mesh bag to limit lees. I make straight rhubarb, strawberry rhubarb and have made apple rhubarb. Rhubarb wine is the one I get the most compliments...

Sugar to get the SG to around a 10% ABV. Then check and adjust Ph. Add pectin, Camden tablets and let it sit a day...

    Wine kit for sparkling wine

Carbonated in the keg. You need to get the wine cold to have it absorb CO2. I also chill the bottle when filling. Cold liquid ho i agree cold wine needed to absorb enough CO2. I also put the bottles in the freezer before filling. Cold wine hitting a warm bottle can foam up

    Wine kit for sparkling wine

I also make beer and sparkling cider. I got tired of the sediment and being careful not to disturb it. I ended buying a CO2 bottle and kegging and carbonating my wine, beer or cider. I bought an attachment to bottle from a keg and it works fine.

Coring a large amount of pears

I too treat my pears like apples. run them thru my Apple grinder then put Them in a mesh bag and press. They are messier than apples and the juice tends to have more solids but this settles out during fermentation. The trick is to press them at the point they are ripening but still fairly solid.

    All-In-One Vaccum-pump man

I reuse the screw tops that came on the wine bottles. They have been soaking in an alcohol solution so I’m am not overly concerned with contamination. I clean them in oxiclean and sanitize them before re-using. I use shrink top to give each bottle a consistent appearance. I have a good source...

    Stubborn label glue removal mistake?

    1st time using Shrink caps

I use them on all my wine bottles. I bottle each batch in 2 different size bottles. Half in regular wine bottles and half in clear 12ounce soda bottles. I usually give people a sampler of small bottles to try and if they like a certain wine I give them a regular sized bottle. The shrink top...

Why is a good sparkling wine more difficult?

I have a CO2 cylinder and do a force carbonation in a keg. I also have a setup to bottle from the keg. It bottles best cold and with the bottles cold. Putting cold carbonated liquid in a warm bottle will cause a lot of the CO2 to release from Suspension and you will get lots of foam and a half...
