    Only problem about this place is the £10 delivery charge... it doubles the cost of the corks.. what corks would you use grade wise? I'm considering the 1+1 as they seems good value and a good consistant closure...

    Thanks, I guess as this is my first kit, i should probably add it and consider leaving it out when I am a little more used to the process. I don't plan to sweeten my wines,,, Keep them Dry....

    Another quick question

    Im just about to rack from Secondary..In my Instructions it says to add the potassium Metabisulphite just before degassing. I just want to ask if this is the done thing? does the Chemical need time to do its thing before degassing or can I just start whipping it up after adding it? thanks

    Thanks for this reply. In the instructions, after secondary it says to add the potassium metabisuphate right before degassing... Is this a good idea, or is not best to let the chemical do its thing first before whipping it up so much?

    "Dry" mouth feel

    I'm no wine making expert, but I've enjoyed drinking it for quite a while!. My understanding is that the use of Oak will only soften the tannins you already have in the wine and won't add any?, Using Wine skins and quality juice is the way I look to add balance to a wine.
