    I don't stir unless it's a skins kit. But when I do, it's just a gentle stir to get things mixed in. Not really trying to agitate anything.

    Clarification on a kit wine

    I was once told that in regards to moving on to different stages of fermentation, follow the directions on the kit and/or the SG....whichever takes longer. Hasn't let me down yet.

I did my filter items on Amazon, as they were all in stock there and didn't want to do some with filter fast and some with Amazon....easier there, and it ships free. I ordered the deluxe package, so I don't really need two racking canes...

    Time in a bottle makes a big difference.

    Bottled my first kit wine back in April and it has been good since day 1. However, I am noticing a large difference between how it was then, and how it is drinking now as I open up bottles 4 months later. Agree, time makes all the difference.

    I dump it at the bottom of the empty carboy and rack away. Gentle stir after I'm done. No issues. As for the gallon of sanitizer....when it doesn't have a strong smell, I toss it.

    How degassed does my wine have to be to continue?

    I'm wary of the same thing. I degas the hell outta my wine in fear that I haven't done enough. But I've let off of that a bit. I bulk age a minimum of 6 months and trying to get to 12 months, so I figure as long as I give it a good once over, it'll work itself out during the bulk aging process.

    Did my last batch with some loose wood chips in the primary...never again. I'll bag them in with the skins or a separate bag...it was a mess straining them out and keeping them out of the spout.

    Racked off of sediment again yesterday and degassed. Using my funnel strain really pulled out the remaining lees. I'm very comfortable with what I have currently sitting in the carboy waiting for clearing in 2 days. Degassing really didn't pull much CO2 out...less than any batch I've done...

    Glad to hear it...after doing this round I was thinking that after I tied the knot on top of the skins bag, I would then put shaving in the muslin, tie another knot. So then everything would be bagged, but separate from each other still.

    Moved this over to secondary on Friday. Everything looks to be going just fine, but it was quite the task moving this and trying to leave behind the amount of sediment it produced. Wood shavings were also a pain, clogging up the nozzle on my bucket from time to time. But it's in the secondary...

    VacuVin question

    Ummm.....seriously not trying to be an *** here, but can you break that down for me in a slightly more simple manner? Are you saying that breaking the seal will have no positive effects, and that it is just better to keep it under vacuum?
