    Sulfite at Bottling

    I see charts and calculators that tell you the desired free sulfite in wine based on the pH. Is this the level of free sulfite I want at bottling or do I want to account for the loss of free sulfite during the bottling process? Thanks in advance.

    Rhone 4600 Yeast

    Has anyone ever used Rhone 4600 yeast? If so, what are your thoughts on it? Searching the forum I really can't find anything on it. I'm looking to use it on my Passport Cabernet Sauvignon Rosé. Reason I'm asking is that I have it and GRE on hand and trying to decide which one to use.

    I have a white wine that I added too much tartaric acid to. pH dropped to 3.06 and TA went up to 8.5, which is a little to acidic for my taste.     WineXpert Pinot Grigio Verduzzo

    I have the opportunity to purchase a 2015 Winexpert Pinot Grigio Verduzzo kit highly discounted from last year. Production date is January 11 2016. Is this kit too old or would it be ok if I replaced the metabisulfite? Thanks Dan
