    Why do we use SG and not Brix?

    I use Brix. I've never like SG because it is less familiar to me. All my winemaking buddies also use Brix, but we all work exclusively with fresh grapes and not kits or fruit.

    What are you hoping to accomplish with a whole berry fermentation? Cold soak should only be done on perfect fruit and typically on those varietals that need more color extraction.

    Krafty, it looks like you gave them the full "Brazilian Wax" treatment. :: In my vineyard, I typically try to remove 80% of the leaves on the eastern side of the wires, but leave 50% or so on the western. For the white grapes, I don't leaf pull at all or they WILL burn.

    Other Oak Spirals

    I've used spirals for the past 2 years. Typically use 3 in my 30 gallon barrel, so yes I think 2 spirals is way too much for a carboy.

    Blew an O-ring in my VC tank's pump

    I would tend to agree, but it won't hold air. Right now I have it in position #3 which works, but I have to pump it up everyday. That's why I wanted someone who actually owns one to take a look at theirs. Let's not forget, it's Italian :)
