Any experience with Red Mountain Merlot

Hello all - I am getting a tote of Red mountain merlot and blending in a bit of Cab Sav and Cab Franc (%10 each). Any tips on yeast choice and technique? Looking to draw out the characteristics of the region, and make a dense age worthy wine.

    weird numbers

Hi all, Ordered a couple pails of Grenache from Brehm making a GSM to go in vadai 50 liter barrel. The Syrah and Mourvedre are in MLF. I thought these numbers were a little odd on the Grenache and looking for advise on must adjustments. Here they are: 26.9 brix 0.49 TA 3.42 pH 71 mg/L...

    First use of PVC filter

Built my filter with 3" PVC only two feet long. I figured it would be easier to clean in the sink. Here are some pictures. First drained 15 gallons of mourvedre juice (from the blue barrel) and a little syrah from the 6 gallon bucket for a rose. Last two pictures are post fermentation...

Looking for a "filter" to siphon juice off fruit

Hi all, I have seen these a few times in pictures from you all. Usually used to siphon off as much wine after primary fermentation as possible before pressing. I can't seem to find this online at the "usual" places. Hope you all are doing well! Chris

    Mourvedre Drum

Hey all, I've ordered a 450lb drum of 2016 Mourvedre, Rattlesnake Hills from winegrapesdirect for part of my fall project. My idea is to pull off half of the juice and make a rose, and use the other half to make a %100 varietal (that I could potentially blend with other stuff I have around)...

    Lallzyme EX vs EX-V

Hi all, I've got 9 buckets arriving tomorrow from winegrapesdirect. Planning on doing a Zin blend and a Cab blend. I think I have everything ready and a strategy. I purchased both EX and EX-V with the intent of trying one on each to see if there is a difference. My last attempt with EX...

    Cap Punching Technique

So I think I may have learned something that I thought I would bring up. And I have a follow on question. I have always thought that aggressive punching down and stirring of the must was desirable to get oxygen to the yeast, release CO2, release heat, and aid extraction. But now I see this can...

    Bait & Switch

Hi all, I have noticed over the years that there have been several wine brands that started off as great bargains, but over time the quality eroded. Maybe my tastes changed or maybe I am experiencing a conspiracy theory mentality, but it seems they leveraged the loyalty/memory of the name to...
