    Topping up?

    I have a Chilean Merlot in a demi john that i wanted to top up. I have read here to top up with a similar wine. My wine in the demi has gone through MALO but the wine from last year, also a merlot, did not. Is it ok to top up the wine that has gone through Malo with a wine that has not? Thanks.

    Oak Spirals

    Just wondering how others who use the oak spirals put them in the demijon or carboy to keep them submerged. Last year they would float and stick up a bit in the neck of the demi and carboy. Not sure if its good to let them do that. Does anyone weight them down somehow?

    Lid and Airlock?

    Im just curious as to when others snap on the lid and airlock onto their primary fermentation bucket. I usually do it around sg of 1.000. Thinking of doing it a bit sooner. Right now my reds are at sg of about 1.002-4 and my white is at 1.004-6. Also when do you rack into carboys?

    Fermaid k instructions say to add at 1/3 sugar depletion. Do you figure this to the point of sg of 1.000 or 0 brix? My starting sg was 1.092, so do i figure the 1/3 point using 1.092 and 1.000? Im at sg of 1.066 now (2 days after pitching yeast) and was thinking of adding it now... Thanks...
