    When I told my wife that they recommend letting it age for at least a couple months, she said "you got to be s***ing me." lol One thing I will say, if you're buying $!0 - $15 a bottle, wine, you will be really happy with how good the kits are.

    I always wonder why the ice and fruity wines are lumped in with other wines. To compare a apricot peach chardonnay that uses a flavor pack to a true chardonnay is like apples and oranges. I think a peach perfection wine is no more a wine than the wine coolers at your local quick stop.

    I use to rack from the fermenting to a secondary carboy then to a bottling bucket for bottling. I use a siphon to move the wine and have had several experiences of slightly disturbing sediment when transferring from the secondary to the bottling bucket which resulted in bottles with sediment.
