    Either try adjusting the corker to seat them deeper, or you can get a wooden dowel that just barely fits into the bottle and tap them in lightly.

    I wouldn’t use RC 212, it’s a nutrient hog and can get stuck / produce off aromas easily compared to the other two. I’ve used the other two very successfully on my past DB efforts, all berries, no added water, came out great!

    Follow your normal production schedule, press, rack off gross lees as normal, top up well, and let it sit in the mid 70’s. MLF should be complete in a month, check to be sure, and let it sit an extra month for good measure before sulfiting.

    My opinion is that great wines can only be made from great grapes, and that only happens when you have great fruit and get the process just right for that grape, that year. Poor and mediocre wines can be made from great grapes by poor winemaking decisions and processes. We see this every year...

    How about filtering your wine when you hit your desired ABV? Sure, you’ll have to run it through a progression of filters to get to sterile filtering, but it can’t be that bad. Hit it with your chems and move along.
