    Condensation above cooler

just an update. The joist space against the outside wall is dry. This is a 4-6 inch space outside the wet area. Drilled a hole through the joist and that area was dry. Everything dried easily with it open and a fan going. We packed the ends of the joist space with rockwool. To the right of...

    Condensation above cooler

That dark spot I think is just a shadow from the insulation around a stud. The entire room is encased with closed cell insulation. Above this floor is a bedroom, but like I mentioned, the entire ceiling is coated with the insulation which acts as the vapor barrier. The next ceiling joist space...

    Condensation above cooler

Posting some pictures to see if anyone has encountered this. Noticed a large water spot near the ceiling above the cooler. After opening up the drywall, the joist space directly above the cooler shows condensation on top of the closed cell foam insulation. One joist space over it is...

    Wine shrink caps

The ID Carlson ones? I noticed those and may have to try them.

    Wine shrink caps

What company or brand do you use for your shrink caps? I have been working through a 1000 lot of heat shrink sleeves from morewinemaking.com and need to purchase some more. However these are very cheap. They shrink well with boiling water and OK with a heat gun (a few wrinkles). To remove them...

New wine room build - planning

I am near Frederick Maryland The cooler runs around $4500 when sales are running. Now this is the largest they offer and is good for rooms up to 3500cf. I decided to spend more up front for a larger unit so it doesn't have to run as often. So far I have not seen any significant increase in...

New wine room build - planning

I have an ink bird on the evaporative cooler. The other one I just leave at it's lowest settting.

New wine room build - planning

I got the Winezone ductless split cooler from Winecellarinnovations. For humidity I have a 4 gallon evaporative unit in one corner which only needs fillups every month or so. And the smaller black ultrasonic one in the opposite corner set on its lowest setting. Keeps it 65-75% and really only...

And the exercise room. The elliptical and treadmill have beer holders, I cant ask for much more.

New wine room build - planning

Here is my brewing closet. A little narrow but functional for how the basement was shaped. And my wine room, it holds 2500-2900 bottles. I just went with much larger then I would probably ever need, but I do not need to ever think about expanding!

New wine room build - planning

So I have finally gotten the rooms 99% done. I still have to fill nail holes and get paint off of where it shouldnt be, recaulk some areas. Otherwise completely done and in use!! Here is my brewing and winemaking corner, still not fully cleaned up but eventually. =) My cigar area. I...

WineXpert WE Eclipse Kits are kinda meh after 2 Years

I just recently found and opened an Eclipse Lodi 11 Cab bottle I had in the back of my wine shelf. Only did extra carboy aging for about 1 year and extra tannins. Made it 5-6 years ago. Tasted great! Didn't have that new wine kit tang that I pick up on most of my younger ones. Definitely...

Other Oak Additions - Need to Boil?

I store my oak in the freezer and just pull it out and toss it in. No issues in many years.

    WineXpert After taste

Probably just too young. I would either leave it in carboy another 6-12 months or bottle and let age that way. Many of mine have completely changed for the better after 1-2 years in the bottle

    What's in your glass tonight?

Del Dotto was one of the last ones we visited. Unfortunately we did not order anything since we joined a new club, Flora Springs. I did send a quick email to see if we can get on the list, there were a couple of the barrel tastings that smelled like bacon, it was really good!

    What's in your glass tonight?

Finally got to Del Dotto on our recent Napa visit last month, really great wines. We wished they had a "club".

    What's in your glass tonight?

Both Beast and Bishop......where is my invite????? Did you cry at least a little seeing the wines she picked? I once had my wife pick a wine for our pizza night. The wine was fantastic and after I double checked what she picked it was one of our reserves from Bravante. Went great with...

    WineXpert Island Mist ABV

My typical process with the Island Mist kits is to add 4 pounds of additional sugar to primary fermentation. IIRC I try to shoot for an S.G. 1.084-1.086 while adding the sugar. I just continue to add the sugar until I get my desired gravity reading (usually about 4 pounds).

New wine room build - planning

Here are some updated pictures Had 1/2 of drywall done. I divided my unfinished basement into a large closet to store wine and beer making items where I can double as a small work room for storage, transferring, and even cheesemaking. The large room will be a sitting area. Couches ordered...

New wine room build - planning

Great, thanks for the input. Will stick with regular green boards. This area is heated, at least I had some ducts placed that tied into the main floor ventilation. Everything was balanced. Would you still put insulation between the floor joists in the ceiling of the basement? If so, would...
