    Tasted first wine

Update: After running out of Almaden Cabernet sauvignon, I decided to try the Welch's again last night. A couple months ago, I'd noticed that one one of the plastic airlocks in the carboy had snapped. I had meant to replace it. But I did not. So no surprise the wine was oxidized, as I...

curiousity on how long to keep wine in carboy

What is the point in adding sulfite? Does that keep the wine from oxidizing?

    First Juice Bucket is Weak

If I can get fresh grapes to throw into the fermentation vat, would it be okay to just throw them into the sanitized blender, and from there into the fermentation vat? So what if the seeds get torn to shreds--the shreds will just settle out into the lees, right?

    reccomend a book

Thanks, Paul. That U.C.Davis ebook clears up some things already.

    Hello from Pittsburgh

Welcome to the forum. I live just a short drive from the 'burgh. I too plan to make a cabernet sauvignon.

    Degas question

With my limited experience... That's the reason you put wine into the secondary fermentation vessel under 1-way airlock. So it can burp itself while you do other things. Let it sit for a year, as Turock says.

    Tasted first wine

No MLF, no. AB finished fermenting the end of Aug. 2013. C 2 weeks later.

    Tasted first wine

I have two 1-gallon wine containers that I made from Welch's grape juice--AB and C. AB tastes tarter than what I'm used to drinking--Almaden Cabernet sauvignon--and lacks the smooth mouthfeel of the commercial wine. C tastes equally tart. But it is a little tastier. I remember eating...

Where Have You Found Excellent WM Info?

I learned about winemaking from reading this forum, and from the Yahoo groups winemaking forum (which I since stopped reading), and from http://winemaking.jackkeller.net/basics.asp Thanks, Steve, for the URL of Eisenman's book. I will read it next.

    Wanna make better wine?

(Oh, so that's what YAN is. I was just about to ask.) Thank you for sharing your wisdom, Jim. I will remember to add yeast nutrient when I make my cabernet sauvignon.

    Welches (I tried, but...)

I don't remember ever drinking Manischewitz. However, I made two 1-gal. batches of wine from two different flavors of Welch's grape juice a year ago, and fermented them to dry. Last time I tried them, this summer, they tasted more like wine and less like must, so they ought to be good to...

    Hello everyone

Welcome Rob, I am in PA too. Made my first wine about a year ago. Am waiting for next month to try it.

    wine in carboy too long

Ten months? Gimme a break. I've waited eleven months for my must to turn into wine, after racking into a carboy. I'm waiting another month before I consider it to be wine. Then I'll either drink it or bottle it, or both.

    Cleanliness

I wholly agree with sanitizing equipment that comes into contact with must. But I don't understand sanitizing the bottles. I thought the alcohol in the wine was enough to kill micro-organisms, since you don't bottle it until a long, long time after it finishes fermenting. Am I wrong?

What are you making and what have you made ???

I didn't make it from scratch. I made it from Welch's grape juice from the grocery store. I started tasting it this summer. With each passing month, it has tasted less like must and more like wine. A couple more months, and it will be a year old. That's when I plan to drink it.

Yeah, Joe, like Tom Petty said, the waiting is the hardest part.
