Versatile Grapple Wine Recipe (11% ABV)

Versatile Grapple Wine Recipe (11% ABV) I like using grape juice with apple juice. I think the two create a synergy which is better than either a grape juice wine or an apple juice wine alone. Here is a Versatile Recipe which I always stick to when making wine, it gives almost unlimited...

    Problem Fermenting Zests!

I notive you are in the US. I wonder whether some sort of preservative has been applied to the outside of the skins (like sulphite or something). I gave them a good scrub before zesting them, but it still stuck the start for a week (just like excessive campden would). I thought it was...

    Problem Fermenting Zests!

Hey Joe, Why wouldnt you add zests during primary? Is it that to retain more of their authentic flavour they should be added when the wine drops below say 1.010, and then fermented until dry, or did you say it because the zest would hinder the start of fermentation if added at primary...

    Problem Fermenting Zests!

I have tried adding it to the must at the start, and as a late add, and it has stopped fermentation both times.

    Problem Fermenting Zests!

Sorry guys, my awful ability to write comprehensively! The problem Im having is that when I add zest to a must, it seems to stop it fermenting! My two zesty orange wines have now started, a week later, after adding some desert wine yeast, but the zests seem to stop the yeast activating so...

    Problem Fermenting Zests!

I have repeatedly had issues when making wines which contain citrus zest! I have been rinsing well the citrus fruit while giving it a scrub with a scourer, before zesting it avoiding the white pith. Ive then added this to my fruit juice and sugar and proceeded as usual. Has anyone else...

    Compilation of Recipes

Ive put a load more recipes onto my site. Can I just want to clarify - I am not trying to sell anything. My home page contains a few links to some great books, which helped me create the site, and are meant as further reading. I am not on commission and most of the books are no longer in...

White Grape Juice Drought in the UK

Has anyone else had any issues getting white grape juice in the UK lately? Sainsburys stopped selling it at the beginning of the year, and Asda have just stopped selling it too. I have had a look around all the supermarkets (apart from Netto), and it is only still supplied by Waitrose, where...

    Compilation of Recipes

Julie, Good point. I can remove this post if it breaks the site rules? I am by no means advertising anything or trying to make money from this. The links are to books which I found invaluable in my winemaking and I wanted to provide these so other winemakers could benefit from them as I did.

    Compilation of Recipes

Hi Guys, After frustration with a lot of useless recipes which seem to be out there, I have put together a list of recipes, which I like and I believe should be reliable. I have also given the processes I use, and other information I find useful! I have provided a few links to books on Amazon...

    Oak?!

Hi Kevin, Thanks for that. What temperature is that at please, 200'Cish maybe? Also, an obvious question maybe, but will red oak be much redder in colour? The plank I have is quite pale (I hope this means it is white)?!

6 DIFFERENT Bottles of Wine from 1 Gallon

Hi Elmer, Dont add it to your wines not to make list at all! Add the dry and medium blends to that list indeed, but the sweet ones come out just like a sauternes and very well, so add it to the "to make list" as well (if you like sweet whites)!! I tried to give an unbiased account of this...

6 DIFFERENT Bottles of Wine from 1 Gallon

An update to how this versatile wine turned out: To recap, the book gives the recipe for a base wine, which can then be diluted with varying degrees of grape concentrate, sugar, water and raspberries to make 6 different style wines. I made up all 6 wines, for which the three sweet wines came...

    Oak?!

Hi Guys, These are really good oak tips! I bought myself a nice plank of American oak last week, I now need to find someone with a circular saw to slice it up for me! I can probably take it back to where I got it from. I am sure they would do it. Cant wait to oak my rich reds up. Do you think...
