    Muscadine juice or whole muscadines

The Carlos grape is an awesome muscadine ,or scuppernong , as we called them growing up because of their bronze color. The Noble is a deep dark purple grape like those we picked next to the creek as a kid.

    Muscadine juice or whole muscadines

Just use your juice. The winery I work for produces about 15,000 cases of Muscadine wine a year. We press our grapes and ferment juice. Maceration of Noble Muscadine (red grapes) is hard, due to the fact that most of the pigment falls out and you end up with a rose colored wine. I have been...

    New Winemaking Room

Looks great. On the construction side, Do you have P-traps on all of the sink drains? I see one in the pictures. The reason I ask, is that being plumbed into the three inch drain you might get some off gassing of pretty bad smells if not.

    Installation of 4’ end posts

Sorry I just read again where you will have two vines per row. Again they will get heavy and you are doing well to make sure they are beefy. I have been fighting with some Magnolia vines on a weak trellis for a long time. Prepare ahead of time and good luck.

    Installation of 4’ end posts

Our vineyard (38 acres of Carlos and Noble muscadine) was just converted from vinifera trellis to a single wire, five foot high wire as well. The end post is important as these vines will be extremely heavy as they grow. Did you place the wire on top of the posts? How many vines do you have on...

Awesome picture. Glad it turned out good for you. The WET and I repeat WET year was horrible here in the south. Let's hope we have a better year in'14. That's if we don't freeze to death tonight.

Question for the Pro Wine Makers

Runninwolf is right NETWORK,NETWORK, and NETWORK some more. That is how I started and it ended up turning into more of my new full time position at a commercial winery than owning my own. Big reason for that is money. It takes a lot of that to start even a small farm winery. Remember what we do...

    Banana Wine

That does seem to be a few bananas short. The recipe I am following was for 3 1/2 # for one gallon. I tend to use 6-10lbs if its berries, but after looking at three pounds of bananas it sure seemed to be enough. I also wasn't thinking when I pitched my yeast and rehydrated and pitched the...

    moving soon , no cellar

6000-8000 BTU window units are becoming more and more energy efficient as the years pass. at their price of around $100 they will climate control an average bedroom, even with un-insulated walls. I would keep my wine close.:h:h

    Banana Wine

Was this a five gallon batch? 24 Lbs of bananas is much more than I used. I was a bit skeptical, so I only made one gallon using three and a half pounds of fruit. What was your ratio of apple juice? That seems interesting. I have never had much luck using vanilla beans in recipes, they always...

    Banana Wine

Is it supposed to be a grey color in the primary? Not a very pleasant color at all. My bananas were not black skin ripe, they were starting to get black spots. The recipe I am following called to slice the bananas with the peels and simmer them in hot water for a half hour. Is that to break down...

    Banana Wine

I just started a batch of banana wine. I'm using a recipe found in Terry Garey's "The Joy of Home Wine Making". I'm not to sure of banana's, but it's only a gallon and banana's are cheap. Has anyone ever made a banana wine? Does it drink dry? Do you back sweeten? I guess looking for input as to...

    Idea for filling head space

Is the bag fully in the carboy? Is there any chance that the water could leak into the wine? Maybe I should wait for the picture. Sounds like a good idea if safe.

    My Second Batch....Altered Dragon's Blood.

I have had real slow starts to my ferments with DB and SP recipes. I have tweeked every recipe as well. Give it a while it should start soon. Did not see where you added any yeast nutrient or energizer? What yeast did you use. The high acidity of lemon juice can be a real killer to some strains...
