    I harvested mine yesterday. I ended up at 25 brix so the rain didn’t seem to affect them. pH at 3.26 and TA at 105. In the past I’ve ameliorated prior fermentation to get the acid down but this year I’ll try to manage through it

    20 brix on mine in northwestern PA. Netted two weeks ago. Hope to keep them on the vines until the pH and acid are more in line. Vines are loaded this year. Looks like a great growing season all over!

    Pail size

    I was taught by a professional winemaker to hydrate first with water and goferm. Then acclimate culture with small additions of juice 3 times 15 minutes apart. Pitch and gently stir in. Has always worked well for me.

    Lift for carboy

    I can lift 24 carboys at once without breaking a sweat! Four post car lift that sees more carboys than cars. Actually we never have to lift a full carboy just slide them from a pallet onto HF dollies and then onto the lift. Use this for fermenting in buckets, all racking and even bottling.
