    Next weekend I am going to start a RJS International Series Chardonnay. I seem to remember reading that it is best to not add all of the F pack to make a more dry wine. How much of the F pack should I add? I have heard anywhere from half to all. Any advice is most appreciated. Vintner

    Thanks all for your replies. There was about two fingers of headspace. I have replaced the airlocks and it seems to be calming down some. I will keep an eye on it today. I had heard some use vodka in the airlock. What is the advantage? Thanks and Happy Holidays to all!
