Flowers of wine? Please say no!

I have never done anythg wth MLF so I have no clue. I just pitched some LLelamand (spelling?) yeast with yeast nutrient and called it a day. I kinda doubt it's still fermenting. I started this wine back in October. Final gravity is about .994. As a matter of fact this years wine was one...

Flowers of wine? Please say no!

Hey everyone, I went down to my secret underground layer last night to investigate the zombie wine. Took a whiff of it and it smelled like good wine to me. I think deezil may be right. I moved the carboy a little bit so I can reach over and give it a sniff and as soon as I did, I saw little...

Flowers of wine? Please say no!

I didn't smell or taste it yet. I wasn't about to get myself in a frenzy so late at night. I will go home tonight and rack it out, maybe even through a filter. I will report on the taste later. The worst part is that I have no clue how long ago this formed. If it IS mycoderma and is has...

Flowers of wine? Please say no!

Hey guys, so I went into my basement to see how my babies are doing and I found this ugly monster on top of one my sangiovese carboys. Did a little research on jack kellers site and some google images of "mycoderma" and "flowers of wine" and none of the photos really look like my problem...

Got questionable instructions for juice bucket

Hey Michael, Julie hit it on the head. I wouldn't worry about bentonite, chitosan/keiselsol at this stage in the game. Over the next few months, as your continue to rack, add your K meta to ensure your wine doesn't get spoiled. In due time the wine should clear on it's own. If you see...

    Fresh juice question

I used RC212 last year and Red Star Pasteur Red for this years batch. From what I read, Pasteur Red almost NEVER stalls. It also appears to be a ferocious fermenter. I pitched it and within 24 hours I had juice spewing out my primary. Even after transferring to my secondary it was still...

    exorbitant lees in secondary fermenter

Crap. I don't have any smaller carboys yet.... This may have to wait until Saturday when I have time to go get some carboys. I have nothing smaller than 6 gallons at the moment. :po

    exorbitant lees in secondary fermenter

Hello everyone, last night I took a walk down to the basement to make sure my purple lovers were doing ok in their new glass houses. Airlocks are still showing activity as they have been for 2 weeks which makes me a happy camper. BUT... I took a look at my 6 gallon carboy of Alicante...

Slow Fermentation - should I be worried?

Hello gentlemen, Well as it turned out I over reacted. And so did the yeast. Last night there was a little bit of activity. Tonight I went down there to stir and holy crap. I took a SG reading and the SG plummeted to below 1.000. Sneaky little bastards...

Slow Fermentation - should I be worried?

Good idea. I never used yeast nutrient before. Tomorrow I took off form work. I will take a ride to the local homebrew shop and pick some up. Thanks!

first time wine making - is there something wrong?

Hey Katherine, Yes you should be stirring it everyday. All the good stuff the yeast like tend to drop to the bottom of the pail. Stirring it suspends it again, allowing yeast to get the food they want. It also allows air to get to the yeast again. At this stage in the game, air is a good...

Slow Fermentation - should I be worried?

Hey everyone, about a week ago I purchased a few pales of Sangiovese, Alicante and Zinfandel. All of them had a OG of around 1.090. I pitch the yeast and in three days the SG dropped down to 1.005ish on all of them. Fast if I may say so. But last Sunday I picked up a 6 gallon pale of...

Purchased 6 gallons of grenache- its a rosé?

Meh. I don't have a crusher and I have already spent enough money as it is. It don't think it's too much as a problem. It's going to get blended in a few months anyway. I was just curious if I perhaps missed something and Grenache usually comes as a rose'. And you are right, they should...

Purchased 6 gallons of grenache- its a rosé?

Hello everyone, Yesterday I purchased 6 gallons of grenache and put it in my basement to have it get to room temperature. This morning I opened up the pale and and found it was a rosé and not the dark juice I was thinking it would be. I never made red wine with grenache before so I'm...

Your opinion - Which oak with which varietal

Hello everyone, So I am stuck on the fence here with may oak choices for this years batch. I have my order coming in 2 weeks or so. I am gathering up my materials (yeast, oak, ect...) now so come crunch time I can hit the ground running. What I have ordered are: 1 x 6 Gallon Grenache 2 x 6...

Anyone ever get sick from thier wine?

Actuallly, people are more likely to have reactions to the tannins in the wine (stuffiness, head cold feeling). Allergy meds should clear that up.

    Cleaning 6 gallon carboy?

You can also look for B-Brite. That stuff rips everything off bottles and carboys.

    What's my ABV???

My father has a vinometer. He picked it up for like 5 bucks. Not sure how precise it is but I would guess it can give a ball park figure.

    New winemaker!

Hello JLBeck and welcome! And congrats on the baby! I myself was not new to wine making but I was a newbie in terms of making wine the "correct" way. Like the others have stated, a kit is a great way to go. My local home brew spot always recommends WinExpert kits. THey have quite a few to...
