    yes the bubbles. whats the pop test? this happens when bottling, i use the all in one wine pump with care if u slow the rate down then the foaming is minimal and dissipates quickly but if flow is full force then it will foam and this happened.

    thanku very much! as for sulfites u may be right my first red wine a cab franc and absolutely delicious was sulfited but im experimenting trying to see what kind of wine i can get without sulfites or added yeast; im learning from the bottom up, now i will watch to see how these wines hold up but...

    champagne on tap i could get used to that:) now back to business when u say fermentation trap do u mean the airlock which allows air our but not in? isnt there a way to trap the gas in a bulk container?

    http://www.youtube.com/watch?v=IY0HEjBJAuM heres a video of a winery in georgia. seems once the qvevri is buried its never removed from the ground. the larger qvevri are easier to clean since one could just climb in but the smaller qvevri are cleaned with brushes and other instruments.

    u say yeast in necessary but maybe thats only if you already sulfited the wine? as for sediment is that only from the yeast? basically lets say you can get a fermentation going without yeast because you havent used sulfites and the wine and juice have both cleared then you woouldnt have to rack...

    New carboy, what size?

    1 wasnt. it happened during racking the lees had hardened at the bottom so i poured instead of using a racking cane and i slipped. the carboy cracked at the top the wine started seeping out but i managed to save most.
