make sure to oak the cashew wine
Oak the the wine for six month, before bottling.
I recently tried a bottle after aging for two years in the
bottle.
It came out excellent, just like the wine in Belize...
I use 15 gallon S.S. beer keg as a fermenter.

I removed the pressure valve in the top center. A size 10.5 stopper fits the hole.
I also drilled a one inch hole about 5 inches from the center hole to aid in cleaning.
I produce about 13 gallons...
I make a elderberry,grape,apple blend
1 gallon elderberry juice
64oz. concord grape juice
64oz. apple cider
6 tsp. acid blend
6 tsp yeast nutrient
2 tsp. pectin enyzme
12 lbs. cane sugar
1 cup heavy roast oak chip
1 packet champagne yeast
enough well water to fill a 6.5 US gallon...

I have visited the country of Belize, several times. They make a wine out of the Cashew apple inwhich the Cashew nut comes from. I am trying to make this wine from Cashew Apple Concentrate I purchased at the local Thai Market.
