    Ramping up to big batches

"Google yeast, autolysis. It's the process of the yeast breaking down after fermentation and creating off flavors. It's a much bigger deal in tall, skinny fermenters where there is a lot pressure on the yeast cake. Is that a problem for the OP? I don't know but it's something to consider when...

    Fermentation temp

You don't get into volume / heat problems until you are fermenting at least half a tonne in one container ,, 200lbs is less than a full brute . 200lbs at 60'f ambient is still a bit on the low side , a small portable heater wouldn't be a bad idea . Put something to act like insulation under the...

FlexTank instead of oak barrel...really interesting

http://morewinemaking.com/category/speidel-plastic-tanks-1.html Seidel tanks are good for smaller volumes but have a similar o2 permeability as the HD ft, I have one 60l They chew through so2 a faster than a carboy but fine for 8-12 month storage . They are small too

FlexTank instead of oak barrel...really interesting

The floating skins give a variable capacity ability they sit on the surface of the wine reducing headspace issues , saturating the headspace with an inert gas gives further protection . I put the skin on after I've racked the wine off the gross lees and into the tank , innoculate mlb and...

FlexTank instead of oak barrel...really interesting

The tall skinny nature of a flex tank makes for a good fermentation vessel for whites And for my Pinot noir I made a screen with a stainless frame that fits in the dexter top and do a submerged cap ferment . This I blend with the wide fermenter Pinot before barreling

FlexTank instead of oak barrel...really interesting

You guys need to get out more . Flex tanks have been independently tested in both the wine trade magazines . Wbm & w&v . Most of the research came from early negative experience with oxidisation in plastic containers , changing the formulation and wall thickness allowed the dialling in of...

Has my wine stopped fermenting too early?

It would take less time to take a hydrometer reading than to post your question. Bubbles mean nothing .

FlexTank instead of oak barrel...really interesting

I blended them together , the barrel, tank and carboy before bottling which worked out well. I did bottle a case of each before blending to see how it develops individually as comparison to the main batch ( 45 cases)

FlexTank instead of oak barrel...really interesting

In 2012 I did a side by side with my flex tank with staves in it and a one year old barrel and compared with a carbou of the same wine and aged them for a year. Yes the free so2 levels dropped at more or less the same as the barrel . The micro ox effect of the flex tank is noticeable , the...

    Adjusting the pH before pitching

71b would be an option , it's just as available and cheap as other yeasts and will eat 5-10% of the malic

    Barrel Imports reviews?

I have a BI barrel and a couple Vadais , they are essentially identical .

    Adjusting the pH before pitching

That would be ok . Are you using acidex for the adjustment? Are these hybrid grapes? What's your TA? 3.1 is low but still in the range where you could use Marvin b yeast (eats 55% malic during primary) followed by mlf and cold stabilizing .

    Cloudy Pinot Grigio

many white wines contain proteins that cause haze issue that are not sediment related. this is why many commercial producers fine with bentonite before cold stabilising. if its sediment related filtering would help. a two part fining agent like that used it kits will fix this haze whether it...

    Barrel wont stop leaking!

3 hours wasn't long enough , 12-24 should do it. or fill with water with a lottle sulfite in it and if it doesn't seal up after 3 days , then it probably wont without tightening the bands

pH too low on finished wine

thats why I gave a temperature , without an external thermostat controler a chest freezer sits at 0'F or -17'C your garage is a better option even with the swings. you can always wrap it in blakets to moderate the swings.
