    Other Cab Noir?

Sounds like you should make another batch of each and experiment with different blend ratios before bottling. pick the best ratio and blend away, but maybe bulk age the blend for a few months before betting to give the two wines some time to really come together.

RJ Spagnols RJ Spagnols - TREK

thanks guys. this wine will probably benefit from more time on oak chips and skins so I'll just wait a bit before going to carboy.

RJ Spagnols RJ Spagnols - TREK

Last week I started a kit the I got last year 2nd qtr 2011. It's been sitting in a cool location all this time prior to beginning the kit. The instructions say that once the SG <= 0.998 that it is time to move on to Stabilizing and clearing. approximately day 14. Starting SG was to be...

    Hello from Washington

Chris, next time we are through Prosser we'll have to try out the VineHeart winery. We're always looking for new places to taste. My wife loves Maryhill and we've recently discovered RioVista just north of Chelan. a small winery that makes some excellent wines. On our first visit, they actually...

    Mosti Mondiale Distilled water.....

Of course you are right, they don't add water to their wine. One too many glasses before making that last post. In any case, none of my kits have suggested anything but tap.

    Mosti Mondiale Distilled water.....

Just to toss this out there - My guess is that all (or most) commercial wineries use domestic water from their local systems. I could be all "wet" but it does seem logical. If it is good for them it should be good for us. Craig

How Many 750ml Bottles Do You Drink Per Week?

on average my wife and I will have 2 bottles a day. some days 2-1/2 some days not much. depends on how we are feeling. we belong to several winery wine clubs so we can drink at discount and of course collect bottles for our new winemaking hobbie. Oh and add in a small cordial of Port before...

    Hello from Washington

Welcome neighbor. I am just up the road in Wenatchee. I've just been making kit wine since August 2010 and on the forum for a couple months. some great info here. I will be spending this weekend at a local winery (Chateau Fare le Pont) for their adopt a vine and in a year or so hope to...

    Oak Spirals

This kit is a Mosti Mondiale Cabernet/Shiraz. I am expecting a great wine and it doesn't taste bad, but not as oaky as I might like. I will follow advice and taste it as the spiral sits there until I think I have what I am looking for. Are these spirals reusable? I so, how should they be...

    Oak Spirals

Thanks Wade. So do you think adding oak at this stage would be ok? I plan on keeping the wine in the carboy until early June before bottling. I might add the oak earlier on my next kit but since every kit I've done so far is different, I am never sure if experimentation is a good...

    Oak Spirals

Maybe this has already been addressed and I've just missed it, if so please excuse the repeat. I've recently acquired some oak spirals and want to know what I need to do to prepare them for use. Everything that comes in contact with the wine should be cleaned and sanitized. Does this apply...

    Tastes Green

Thanks. I've seen those and they are pretty handy devices. We've considered having one for the travels. At home we use a wine aerating funnel with mesh filter when we pour into our decanter. even so, the wines just aren't ready, even after leaving to sit for a few hours or day. I...

    Tastes Green

I have done three kits since August 2010. The first was a WineKitz Cab/Merlot. I followed the instructions but aged for an extra 4-6 weeks in5 gallon carboy. I bottled 3 and tasted, it was actually pretty good but a bit effervesent. Before bottling the remaining 5 gallons, I did a more...
