    Frozen kits

    I am having a new kit shipped from Texas to Spokane. It will be going thru some pretty cold weather and I am thinking there is a good chance it will freeze somewhere along the way.     White wines are good for summer because you drink them cold. If you like white wine make a white kit also. You can drink it after a month and it will make it easier to leave your red to age.

    I have been reading about kmeta vs sodium bisulfide. They say kmeta can leave a taste if too strong a solution or too much amount is used. Does not say this for sodium bisulfide.     I use 2 oz per gallon and the only kmeta I use during making is what comes with the kit, unless I plan to bulk age a lot longer than required. Can I get by with a weaker mix?

    Does anyone sanitize their bottles with meta solution and then rinse them before bottling? I don,t rinse them and sometimes can still taste kmeta even after wine has aged for over a year.

    It was a cellarcraft kit, started3/6 sg 1.098. Ending sg. .998. Fining agents used were kieselsol/chitonsan. I degassed per instructions and also hooked up my vacuum pump to it and could not get any bubbles to come up. Also added sorbate, k meta, and flavor reserve as per instructions.

    My yakima Pinot Gris has been sitting for a month after adding fining agents and is still slightly cloudy. Have not had this problem before. Would like some suggestions as to what I should do at this point. Thanks in advance, Ron.

    Looks like this kit will be just fine. checked sg today. it was .998. snuck a little sample. It will be hard to keep from sneeking a bottle of this for a year, it is already very tasty.

    I got all the chemicals and the strainer bag. I did only get one bag of oak shavings tho. not sure whether that is all that should have been in there. They did send me the grape pack when contacted.
