    I don't do kits but it is my understanding that the acid is adjusted for the type if wine being made . Why are you refrigerate it to drop acid ?

    If you are making 5 gal you need more fruit . 5 lbs of fruit per gal would be a minimum. 100% juice is the best.

    To each their own, I have $20 and one evening in the shop invested . I can run a load through in ten minutes . I don't use the washer for sanitizing. I use a bottle sulfiter on top of my bottle tree, it is quick and easy.

    I picked up a used dishwasher and made a few modifications . I can set any amount of time and temp. Any size bottle will fit and I can wash 20 bottles at time. Works great !

    Never less then 12 months and it can be more then 18 depends when I get around to bottling . One exception would be Skeeter Pee 3 to 4 months it is good to bottle. Aging this long you don't have to use clarifiers or degas.

    Thanks grapeman I am going to try to add ES6-16-30 to my vineyard this spring. Sound s like Adalmiina will be a good addition for blending. It has been cold this spring and we are two weeks behind on planting and now the rain is holding us up. What is the weather like out your way?
