    Sounds good, I would zest and juice the oranges to add to the secondary and trash the shell of the orange, no need for the pith. Also adding the juice of a lemon will help firm up the mouth feel, or you can add acid blend.

    Is it just me?

    I've had both Mango and Kiwi wines and a tropical mead that included both fruits, all were fantastic. I would not steam the juice for these fruits, but it could be me being overly cautious. When you make them, make extra because they (along with pineapple and papaya) drop a lot of sediment.

    Have you tried taking an SG reading? Sometimes it looks like the wine is doing nothing or very little, but the yeast are actually working away happily. Also what are the temps? Lower temps will slow the process down and kits should be around 75 to ferment.

    Welcome to the forum. I haven't watched any of the videos and I'm not sure that you mean 2nd fermentation, perhaps you mean secondary. However once your wine has a stable SG reading for 2 or 3 days you can rack it to glass (or better bottle) or the secondary and proceed with the instructions...

    Time in carboys

    Have you tasted the wine? If you think (after tasting) it needs more oak then let it bulk age on about an ounce or so. Just be careful because you can always add more oak, but you can't take it out.
