    Hi Barney; I use mostly tame chokecherries [Canadian red something] Barney and I have traded wines in the past and his chokecherry apple blend is really nice.....As Barney said wild chokecherries can get a bit harsh and need about 2 yrs. in the bottle to mellow out.....A blend might be the way...

    Strawberry Wine

    Can't find the notes on this one, but as I remember it, the honey was from Sam's Club and the strawberries also....2qts. of honey and 2qts of strawberries, for a 3 gal. batch.....And yes, pretty weak on the strawberries...bottled this in '05....The mead is pretty nice with a nice strawberry...

    Take a hydrometer reading would be the first step....I would get more yeast in case you need to restart you fermentation...if you need to restart, do a yeast starter to get your yeast going before you add it to your beer...keep us posted on what is happening..

    Strawberry Wine

    I plan to do an F-pack and to back sweeten.....Did strawberry mead a while back and left it dry...Had great strawberry smell, but expecting that nice strawberry taste just wasn't there in the dry mead...plan to try to fix that....

    New guy - Need some info, please.

    I just checked an instruction sheet for a Brewer's Best Red Ale that I have done...It said 64 to 72 for fermentation.... I guess I like to be in the higher end, just to keep things going and get a clean fermentation....but that's what works for me...when it gets cool I have even put a brew belt...

    Can you check the beer temp., it maybe a bit lower than that...I like to ferment with a temp. about 70 to 72... hope this helps...Good luck
