    High acid - Low sugar

I just checked acid and sugar in my frontenac grapes that are still on the vines. Brix is 17, PH is 2.95 and T.A was at 2.8 when I ran out of hydroxide. I was measuring T.A. With the PH meter and at that point PH was 6.5 so I still had a way to go. Does anyone have any suggestions on what I can...

    This year's frontenac

Well after all the help I received on this forum, I think this years wine will be much better. We left the grapes on the vine longer until the brix was higher and ta was lower and then did mlf after primary and at the last racking in January it tasted very nice. Sour wine

I had posted in March that I had 15 gallons of wine in secondaries that I started in October that was sour. I checked again today and it was about the same. I used the tartaric acid kit and as far as I can tell the acid is .8 percent. P.H. Is 3.17. Specific gravity .998. It seems to have a good...

    Sour wine

I started my first batch of wine from my backyard Frontenac grapes last fall. I now am pretty sure I picked the grapes too early because at this point I have 15 gallons of sour grape wine. S.G. is .998. If I add 4 teaspoons of sugar to 6 oz. of the wine it becomes drinkable and the S.G. is 1.40...

    Planting Foch

I have some year old Foch that I started from cuttings and was thinking about putting 2 of them in each hole. That way I could run single cordon or if one died I could run double cordon like I usually would. Any input on this would be appreciated. I am just going to try a few but was wondering...

    2008

Is it just me or does it seem like 2008 was a good year for inexpensive wines? There seems to be many good ones out there. Does anyone know why?

    Nortons

Anyone growing norton grapes in Wisconsin or Minnesota? I would like to try and start some if it sounds doable. I am close to Lake Michigan east of Green Bay so the climate is not too extreme.

I'm trying to find a simple recipe for mango wine for my friend in Jamaica. It has to be simple because supplies here are limited as well as funds. Thanks.

    Hello from Wisconsin

Hi everyone! My wife and I harvested our first batch of Frontenac grapes last fall from vines I started four years ago from cuttings. We have fifteen gallons in secondary's now and I'm sure I'll have plenty of questions coming soon.
