Have I waited too long to make this wine.

I purchased a couple of cans of juice concentrate a couple of years ago to make some wine. The juice is Riesling. I purchased an expensive kit a few years ago and waited too long to make it. I could not get it to ferment. Have I waited too long on this canned juice. Thanks

Need kit suggestions Have been out of winemaking for a couple of years

The last good wine kit I used turned out bad. It was a highly rated kit but I let it sit too long (I suppose) before using (life got in the way). I am considering getting a good kit that I feel will turn out good. What kits are hot right now. I am open to a white or red. I prefer white but I am...

The optomist.A facebook friend of mine posted an image of a wild grape vine. And I commented that it would be nice if grapes grew on those vines (they

This is the story of the eternal optimist. There was this little girl named Candi and this litlle boy named Leslie. They were in a pen that was filled with horse manure. Leslie was whining and crying about all that manure. They were up to their necks. Well. Candi was jumping around and swimming...

Island mist BB merlot less than exciting.

I messed up the suggested process and I am considering adding a couple of jars of Blackberry jam. I will prevent any possible ferment first. How can I best liquify and add the jam.

AC unit will not turn on after the inkbird shut it off

I bought a new LG window unit for my wine storage area and planned to use an inkbird to control it. I got it to running and left. When I returned the next day, it was hot in the room. The manual for the ac indicates that the AC may have an auto restart function but apparently it does not work...

I messed up on an Island mist kit during ferment

A little over a week ago I started an IM kit. I forgot to put in a red grape concentrate and I had to order another and I still don't have it. Hopefully I will get it monday. I have not checked lately but I am pretty sure the ferment is about over. If I add the juice in a few days, should I hope...

Do I need to make simple syrup out of corn sugar

I am making an island mist wine and I am adding one pound of corn sugar. Do I have to make syrup or can I just add the sugar and stir well? I had rather not make the syrup.

    winery heating question

I have no heat in my Northeast Florida winery. It can get cold enough to mess up a ferment here. I have an oil space heater like this: I can easily build an insulated box to keep my buckets/carboys in and put the heater in that with a remote thermostat. I will have three ferments going...

Going to make three wines and would like suggestions

I am going to make 3 wines from kits or concentrate and would appreciate you suggestions on tweaks. Number 1 - Island Mist Peach apricot "Chardonnay" - I plan on making it 5 gallons, using half of flavor pack at ferment and boosting sugar to a point of having about 10% alcohol. Number 2 -...

I need six gallon carboys but could I use fermonsters instead

Isn't there too much headspace in a 7.5 gallon fermonster for a 6 gallon kit. Also, can you age in a fermonster. After reading some reviews, I now am wary of the fermonsters.

I asked this elsewhere but should have asked it here.

I added too much water (I never use water but had to here) to top of some Dragon Blood and it has lost body/mouthfeel. I think I need to add acid. Can I add lemon juice or should I use acid blend or something else?

Topped off with too much water, what to do?

I made some Dragon Blood (also used several jars of blackberry Jam), thought I had cleared it and apparently did not. Racked it once and noticed that it had lots of gas. Lost a lot of wine due to it not being clear. Topped it off with a red wine. Tried to clear it with super clear. Did not clear...

What to do with this stout kit

It is a Brewers best extract kit and I want to improve on it somehow. Thinking of adding cold brewed coffee, Any other ideas? If I do that, how much coffee. Thanks Buster

Seems to me a real slow ferment

It is an en primeur Merlot. I started it about 16 days ago and it is still, slowly fermenting. The kit is a year and a half old. LIfe really got in my way and this is the first wine I have made in over 2 years. It started well but at about 1 week, it just about stopped. I lowered the room temp...

    Question about extended maceration

I have a En premeur merlot kit that is slowly (I hope fermenting) in the primary. I think I want to do the EM style with it but don't really understand how it is best done. It is in primary now with skins and oak. I am thinking that once it through fermenting, I am thinking of snapping the...

Will too much yeast nutrient cause a stuck fermentation

I put twice as much nutrient than a recipe called for and the ferment has stopped at 1.020. I was wondering if so much nutrient may have negatively impacted the ability to ferment to the dry point. I have started a yeast starter with some wine, some sugar and Fermaid K. Hopefully that will...

Is this a good price on a hydrometer

I like quality products and I don't mind paying for it. www.amazon.com/Hydrometer-Beer-Wine-Glass-Test/dp/B01DUPMZJK/ref=pd_ybh_a_1?_encoding=UTF8&psc=1&refRID=67YMCD0CXA49MN7E5J39
