    Any thoughts on the lemon juice ingredients? What brand of lemon juice have people used? Should I be looking for 100% lemon juice with no additives? Looking forward to getting this thing rolling!

    Bottled this bear tonight! My sample was awesome! I really enjoy the oakey nose this one gives. Also, has a good body compared to other we kits without grapeskins and less expensive. In a couple of days it goes horizontal and down to the basement until...:D

    Okay, thanks for the reply Javila. I am going to leave in carboy until I need the carboy for something else. So that extra addition is specifically for this purpose? If I wanted to leave it longer than six months I would need to have a means to test for sulphite levels and make additions...
