4 days without Punching down the cap

I had my grapes fermenting for 5 days and already they were down to 1.02 SG. the problem was, I had to go out of town for 2 days. I showed my wife what to do and when to stop (if necessary) but I just found out she forgot to do it. I can't really smell much and I'm sure there is a layer of...

    SO2 calculator

It's been awhile since a regular on this forum. many new computers later I'm trying to find an copy of some of the old calculators I used to use. I believe Fermcalc was the one I liked best as it easily measured SO2 addition, using either 10% solution or KMBS. The links appear to no longer...

    100L variable lid tank question

I'm thinking of getting a couple Variable lit tanks to age my wine in and started thinking. with the variable lid you don't have any oxygen or head space in the tank yet it seems to mature. what is the difference then, between a tank like this and using corny kegs?

When do you guys think we will be getting together this year? I'd love to come up this year but I'm working the weekend of the 28th. Is it it the realms of possibility to have it on the 4th, or is that too close to Easter? Guess it's that time of year again :b

    Trouble with backsweetening

OK, this I don't get. Bought 24 gallons of Pinot Grigio fall of 2013. Experimented with zesting on 6 gallons and was not happy with the results (too much grapefruit flavor) While I understand to ad less zest what I don't understand is.. I back-sweetened the zested wine to make it a little...

Ever dreaded white haze on the surface

My Chilean Malbec has developed that ever dreaded whit film on the surface accompanied with a slight musty smell. I've had this before and normally a 1/4tsp of k-metta and a racking did the trick. This time, however, after doing this twice already it has returned after 3 weeks. The bung...
