    Wine Cellar Opinions Needed

Mike, thanks for sharing with pics. I had another design but, I like yours better. I mostly bottle splits and your design will accommodate all the bottles that I use..

Building my wine storage area. WITH Wife's blessing

I noticed you do not let the bottles touch each other. Is that a taboo when storing wine or just the way you wanted to do it??

Building my wine storage area. WITH Wife's blessing

Great looking storage. You definitely got outside the box designing it.

    Finally built my wine rack

Bill, thank you for sharing. I bottle mostly splits but your storage rack will be great for them and I will use 1x10 and it should be great.

    RJ Spagnols Old Liebfraumilch Kit

As long as your kit is stored in a cool place out of the sun and there is air leaks in the kit it will be fine.

    RJ Spagnols Old Liebfraumilch Kit

I have done two Liebfraumilch kits in the last two years and it does look like apple juice, raw unfiltered apple juice. It will be fine, don't rush it. It may take up to 6-8 weeks to get the final clearing. As usual the area that you had it stored in plays heavily on the life of the kit...

WineXpert Maintaining Fermentation Temp in cool environment

So keeping at the lower end of the temp. scale should help the fruit flavors to develop more fully. I will try that in my next batch/kit.

WineXpert Maintaining Fermentation Temp in cool environment

Does the fermenting stage temp. affect the taste of the wine from a cool 60+*F to a hi 70's*F or is it a nonfactor?

Thank You John T, I do.

It breaks my heart that I cannot afford these....

48 yrs. She bought me my truck, lets me do whatever I want in reason. I am not a heavy drinker/partyer and I don't mess around with other women. So, for some that would be a deal breaker but, I am fine with that.:D

It breaks my heart that I cannot afford these....

I feel for you guys. I am really fortunate. My wife will help whatever I need and never complains.

It breaks my heart that I cannot afford these....

It isn't a bad price if you are local but, 72 bottles isn't that much if you are making wine and want it to age. I am going to have to make my own as I mostly do splits and need the rack set up for mostly them.

WineXpert Maintaining Fermentation Temp in cool environment

Wow, great info. I am a relative newbie only have made four kits so far. I have isolated the dining room opening with sheets and brought the temp in the room up to 72*F and it was great. If I shift over to a heating pad and or the brew belt I wouldn't have to isolate the room. I am getting...

    Just do Kits?

RC, I am just like that. When I found out that each step wasn't time critical sometimes it just sits and clarifies while I am out and about for weeks.:D

Bob, it sounds like you are really enjoying life's journey!!:D

    Just do Kits?

Geronimo, You are absolutely correct. Any Sauterne you buy that isn't a premium usually has a very poor taste to me. I remember back in the late 60's and early 70's everyone was making a Sauterne. E&G, and all the other inexpensive producers had one. I had a Swiss Fondue recipe that used...

    Just do Kits?

I have been doing wine kits for a couple of years now and really like the quality of wine that it makes. I have so many other things I like to do that I don't want to devote anymore time to my wine making. The only thing that could make me do other than a kit is if I could find a recipe and...

To sanitize or not, is there a compromise?

I have always followed the directions on my 4 megar batches and they have aged great. I have been wanting to branch out, so to speak, and try a batch using just the mead concentrate and add everything else.

To sanitize or not, is there a compromise?

Interesting thread. I have only made four batches of wine so far and everyone has turned out great. I always wash my equipment well after using it and then rinse with hot water before using it. I use my metabisul to sanitize and I don't think I am obsessed. I only use kits so far and really...
