    Vignoles and oak

    Has anyone used oak their vignoles? My vignoles is very high acid, abt 1.0%. Back sweetening seems to be the obvious way to get some balance. But reading posts from members who have used oak on dry whites makes me wonder if I could get some balance from oaking.

    I use argon. It is heavier than co2. i have a small tank and regulator that i bought on ebay. I use it to top off anything that will sit for than a couple of months (I do all aging in the carboy). Tank will last me a year or two. Last time I had it filled I seem to recall it was $22.

    A few years ago I asked WE why the bentonite is used during fermentation. I don't remember the exact wording, but the bentonite played some role in circulating the yeast, keeping it in motion and not settling to the bottom too fast. Plus the prevention of protein haze formation.

    Micro-batch

    I've made wine from tons of grapes, to one gallon trials. But this is the smallest batch of Cabernet Sauvignon I've ever done. Wouldn't have started it except the source of the grapes is special to me, my wife, and a friend. I call it "TLC", for The Last Cabernet.
