    I'm picking up my first Chilian juice buckets (Merlot and Malbec) tomorrow. I assume they will benefit from MLF. I think I read somewhere that MLF is done after fermentation with the lees present and stirred daily. Is this correct? If so, is this all gross lees? What is the best culture to use...

    Allinone

    I put my new Allinone to use this weekend. Racked 6 gallons of Pinot Noir and bottled 5 gallons of Blueberry. I'm most inpressed with the ease of bottling. This is truely a great piece of equipment. Thanks again to Austin and all else for the givaway and many thanks to Steve for his generosity!

    Cellar Craft PH of sterling kit

    I just started a Cellar Craft Sterling California Pinot Noir kit. I measured the ph at 3.79. Is this too high for this kit or is it ok? My meter is calibrated. Should I go ahead for now and then measure and/or adjust later? Thanks.
