    Black Spanish spacing....

You look good to me. I just went by dry comal creek vineyards and looked at theirs. I was surprised at how close they had them spaced compared to what I have done. These things grow like crazy. I bought a bottle of their 100% black spanish and I was surprised how good it tasted. Now I have...

    are they ready yet?

Any guess on how much longer these will take to ripen. I know the technical way would be to test the sugar but that it's not an option. This picture is from 4 days ago. The sg of the juice here was 1.060, 14.7 p, and 15.3 brix. Just looking for a guesstimate. In the next week, or more like 3...

WineXpert Wrong for 5 years /when to add K-Meta

I'm no expert at this as this is my first time testing so2....but... If bulk aging I would add 1/8 tsp every 3 to 4 months. And have one of those additions coincide with bottling. The so2 dissipates with time in a carboy...and to a lesser extent in the bottle. I would be interested in taking...

WineXpert Wrong for 5 years /when to add K-Meta

Mine where topped up and not touched for about thre and for months. Also kept in a temperature controlled environment at 65 degrees. Based on my tests, I would say 6 months is pushing it and I would add 1/8 tsp at the 3 month Mark if I couldn't test the so2 levels.

WineXpert Wrong for 5 years /when to add K-Meta

Cool. thanks for the info. I do have k meta powder i'll be using. Probably add .5 grams k meta. I plan on bottling half and racking the other half on to some cubes tonight. My other wine: WE arg malbec bonarda disclaimer: I used the same reaction solution that i used on the cabernet...

WineXpert Wrong for 5 years /when to add K-Meta

I have been doing what puttr does. I did just get a kit to test the so2 levels. I just haven't had a chance to use it yet. I might get around to it and test 2 carboys that only have the initial dose and are about 3 and 4 months into aging. I'll report back if I get around to it. I have always...

    smokey reds

I am pretty sure I remember reading on the beer forum about someone who tried liquid smoke. I think it ruined their beer. You might want to search over at homebrewtalk.com. those guys like to try all sorts of different things.

Should muscadine wine be completely dry?

I just sweetened to what I thought tasted good. Seamed a little flavorless dry but the sugar brought out some good flavors. I didn't use much. Maybe 1 cup in 2 gallons. I didn't take an sg reading though. Also these where wild ones and it wad my first year making muscadine.

    SO2 Testing

Huh....I was under the impression you needed to spend several hundred dollars to test so2 levels. I wrote off testing so2 as too expensive but this might change that. Any reviews on accuracy are appreciated.

    Mistaken Assumption About Water Used?

I have a theory that water can make a HUGE difference in KIT wine making. Ive been thinking about this for a while. The first being the change of ph that it can make happen. Down here in texas the local water municipals like to pre soften our water through an ion exchanger. this removes...

Packlab Looking for a good semi-sweet Riseling kit

I know someone had an auslees kit. I think it may have been an ultra premium one so I passed on it. The traminer reisling is about 12.5%.

Packlab Looking for a good semi-sweet Riseling kit

I made the Australian traminer Riesling for my wife. Its about 8 months old off the top of my head. We had a bottle the other night. While it is good, it is different the Shmit sohne Riesling (blue bottle??). My wife is the Reisling drinker and according to her the traminer riesling isn't...

WineXpert LE 2012 Argentine Malbec Bonarda

Just added the finings and stuff to this kit. One of the steps mention oak cubes which got me thinking. My kit only came with one package of oak chips/dust. Is that correct. It kind of seems a little lite on the oak for a malbec. Am I missing some cubes??? Either way it tasted good. Not...

WineXpert LE 2012 Argentine Malbec Bonarda

I finally got around to picking up this kit today. Hopefully start it within the week. It sounds good but I'm curious to see how it holds up against my en premier and winery series kits in body and flavor.

RJ Spagnols Started: Cellar Classic Winery Series Cali Cab Sav

I just added the classifiers to this kit. Tasted good considering its only a few weeks old. I'm debating on adding more oak. It only came with one package for the primary. Seems a little light?
