    Starting from a packet, you're going to be 2-3 days before she really starts a bubblin... I'm not a big fan of the slurry start method - so this is my normal scenario... I usually use the lalvin 1116; using a champagne yeast should translate into a faster fermentation once she gets started though...

    Yeah, didn't want to add any more sorbate/sulfite... Guess we'll just add more concentrate; and let her ferment away...     Just the standard 5g batches... I'm ok with giving this batch away - I'm not a fan of the wife's ribena addition to this batch... Must be a european thing...     Thanks, I miss my good camera... Taking her to visit a sheep farm was a great experience; she's got amazing natural instincts, this was one of the first times we got to see them... The protection instincts are strong in her; not sure if I ever really want to see her go all pyrenees on...

    Anything I can do to stop fermenting - wanted to backsweeten with honey... I guess at some point the yeast will die off due to alcohol concentration... But I wasn't going for a strong apple cider :d One of the local wine shops suggested backsweetening with lactose or splenda (ala beer making)...

    Went dry to 097; Went 6.25g sorbate (23L); 1tsp Kmeta - about the same as every other run... Degassed with the drill attachment, and follow up with vacuum. Gravity now is 1.10 - but back into very active fermentation...

    Strawberry's been backsweetened/fpac'd a bunch (we're 3 bottles of strawberry syrup now) - yeasty flavor is not as strong, but still pretty much wrecking the taste... Gotta start up another batch of plain SP :) Down to our last bottle and bags... Whoops :)
