    Can I fix an oxidized wine?

    I have a high quality kit that i have aged for about a year and i am sure it is getting oxidized. it has a slight brownish color and has that taste. i probably should have added sulfate more times. Can i salvage this wine? Thanks:m

    Elderberry wine better dry or sweet??

    I have not ever tasted a fruit wine that was not backsweetened somewhat. Except for a great dry apple once. Couldnt tell it from white grape. Is elderberry good dry?     If you are going to campden some must and pitch yeast 24 hrs later, can it be under airlock for the 24 hours? Or will this keep the sulfur from escaping enough? Thanks, Larry:n

    Raisins or fruit in a kit

    :?If I add raisins or fruit to a kit do I have to worry about them being sulfited before addition to primary? Since you don't normally add campden to the must, wait 2 hrs and pitch yeast in a kit like fruit wine. I'm wondering if the raisins will contaminate the kit. Thanks
