    Can't stabilize and clear my Merlot on schedule

    I'm making a Harvest Selection 28-day Merlot kit. The instructions call for it to be degassed, stabiliized and cleared in a few days but we'll be on vacation at that time. Can I safely delay this step by 10 days or should I do it two days earlier than the instructions call for?

    Cork leaking

    One of my bottles I just corked is leaking a couple of drops of wine from around the cork. Advice? I suppose I could just open that bottle and drink it. There is a small amount of cork sticking out of the bottle. Maybe too much head room.

    SG won't go down

    Hi, I'm new here. This is my first post. My batch is now on Day 47. It was supposed to reach SG of .995 three weeks ago but it seems to have plateaued at 1.00. My house is cool. Will applying heat to the wine bring the SG down? What should I do? It's a Petit Verdot.
