Maybe I'm missing something but if you have several varieties of wine unopened. why not just open a similar wine. Top up and then drink the rest of the bottle.

I'm making a Harvest Selection 28-day Merlot kit. The instructions call for it to be degassed, stabiliized and cleared in a few days but we'll be on vacation at that time. Can I safely delay this step by 10 days or should I do it two days earlier than the instructions call for?
