    When you say "press the apples dry" are you referring to using a grape press? If so, is there any other way of doing it if we don't own a grape press?

    Ok, one more question...if you haven't noticed I worry a lot.... I added a bottle and it still wasn't up to 2" from top. So, I transferred to a 5 gallon after 5 days so there would be no air and filled up a few bottles. The directions say to rack it after 8 days. Should I still rack it...

    There is not too much head space, maybe 5"... Yes stage 3 is stabilising and clearing. It's been in their since the 15th of March.

    I'm making Stags Leap Napa Valley Merlot. After stage 3 I was told that it wasn't important to top up all the way(6 gallon carboy) but directions say otherwise... any suggestions? Thanks. Dave

    Thanks. The temp down there is def. under 70 and I don't have a brew belt, that may be the issue. I'll probably give it a few more days and then move on to step 3, hopefully it will drop a little bit. I hear a lot about degassing but don't know much about it...is that stirring the wine up?

    Jdeere- I appreciate it, nice to hear- it's all starting to make more sense to me now. Sounds like yours is right where it should be! My Stags Leap after 10 days is not moving from 1.000, any suggestions?

    Sorry that was a typo, you're right it was 1.004. I had a bad first experience with my Chilean Pinot Noir. So I'm really trying to make this Merlot perfect, glad to hear I'm on track. I'm about filter my Pinot Noir, hoping for the best.

    I racked mine from the primary on Wednesday morning at 1.010, I checked it today and it was 1.040, seems to be on track right? My wine temp is probably around 67 degrees. Excited to try these!
