It turned out very well. In fact, it took best of show at the Nebraska State Fair a few years ago. Like all port-style wines, it's sweet but the alcohol kick offsets the sweetness.
I stopped degassing my wine a few years ago, opting for lengthy bulk aging. I now bulk age for a minimum of a year and never have any residual gas problems.

Yes, I just returned. I arrived last Thursday to help out and judged three days. There were over 170 commercial mead entries and 250 home entries. I'll post some pictures when I get a little time. I'm still getting caught up at work.
I think I actually bought 10 grams. I don't remember the cost but it was ridiculously expensive for the amount. Overall not too bad though. I cellared for a year prior to tasting and I really enjoyed it. I have a few bottles left somewhere...

I steal one of the $1.49 rubber door wedges I bought from Wal Mart that I use to keep my barrels from rolling away. I wait until the carboy is about 2/3 empty and then slide in under the side opposite the racking cane. The rubber doesn't slip.
