New iPhone App for Wine Calcs

That's understandable. I personally don't like freemium apps (usually because the ads are naggy), which is why I didn't take that approach. The website is basically a way to "trial" the functionality, albeit in a different interface, since the math is the same and the results output is the same.

New iPhone App for Wine Calcs

I've just released a native iPhone app version of my website wineadds.com. It has all of the calculators and conversions that the website offers, with the addition of a fortification calculator that allows the option of simultaneously targeting a final Alc and RS. With the app you can also...

    Calculating additions on your iPhone

Hey Dufresne11, I am looking to make an Android-optimized version available soon. It won't be a native Android app, but rather it will be optimized for the Android platform while running in the browser. This is good in that it will be free, but bad in that you'll need an internet/phone...

    Calculating additions on your iPhone

Copper (sulfate) does pose some health risks, though they are relatively minor. The NFPA (National Fire Protection Association, the group that standarzises safety warnings with the blue, red yellow and white diamonds) rates Copper Sulfate as a "1" health risk, meaning "Exposure would cause...

    Calculating additions on your iPhone

No worries Troy, using cell phones isn't everyone's cup of tea. I'm hoping to add more calculators over the holiday break... Copper additions is the next one in the queue. Happy Holidays, Stu

    sulfites

There's no difference to the "potency" of Na-Meta and K-Meta. Perhaps the perceived difference is because K-Meta is about 56% SO2 by weight, while Na-Meta is about 67% SO2 by weight (because Na is lighter than K). So, you need less Na-Meta than K-Meta per quantity of SO2 (maybe that is what...

    K-meta shelf life

+1 to Jim Cook's reply, K-Meta will last a long time if stored properly. Keeping it out of direct sun and heat will help.

    potassium sorbate?? how

Sorbate should last longer than a year if kept sealed and dry. No need to keep it in the fridge though, someplace cool (50-60F) and dry would work fine.

    DAP toxic?

Tall Grass, Adding DAP to the water that you rehydrate your yeast in is definitely toxic. When freeze-dried yeast are rehydrated they are unable to regulate what chemicals pass through their membranes, because the membranes are dessicated. Once the membranes are rehydrated they function...

    What kind of yeast?

Splashing stinky wine without a simultaneous copper addition can encourage the development of disulfides that tend to smell even worse. Splashing the wine alone oxides H2S and mono-mercaptans that can form disulfides which are more chemically inernt that mono-mercaptans or H2S. If you're...

    What kind of yeast?

Champagne yeasts are great for their flocculation and nice flavors they give off during autolysis (the process of yeast decomposition during sur lie aging). I believe Pris de Mousse (PDM) is genetically identical to EC1118, and substantially cheaper when I last checked... either one is a...

    Aging Wines & Cork taint

A cheaper way to get rid of cork taint would be to immerse some Saran Wrap in the wine (needs to be polyethylene, any brand will do.) The TCA in wine has a higher affinity for the plastic than it does for the wine, so it sticks like glue to the plastic wrap and comes out of solution. It's...

@Wade E, yes thankfully we are permitted for that volume, the ABC wouldn't take long to shut us down if we weren't :) Glad to have found this corner of the web!

    New to the community

In my cellar I've got about +/- 1Mil gallons of 2009 wine, mostly Zinfandel. I work for a large-ish winery in Sonoma, CA that specializes in Zin, but enjoy making / tasting all kinds of wine. Life wouldn't be complete without beer, so in my spare time I brew a little too. Thanks for the...

    Question About Adding Campden..

Sorbate doesn't kill yeast, it just prevents them from growing and dividing (just as good, right?) Technically it's considered a fungistat, not a fungicide. AFAIK, you can add SO2 before/after sorbate with no I'll effects.

    Acidity check: now or later?

I agree with Hector… In general you can adjust acid to taste at just about any point. I recommend you do a trial first, just to be sure.
