    What is your WEIRDEST wine you made?

    I just did the first racking of a Jalapeno wine, and I started French Vanilla Coffee wine yesterday. LOL My basement smells awesome right now. The one I am not sure about is my Cinnamon Pumpkin Spice Wine, it tastes brutal now, but supposedly in about a year it will be much better.

    Freeze your wine !!!!

    This spring we had a "wintered" wine party. One of my boat friends left over a case of mixed bottles on his saiboat this winter which froze and pushed the corks half way out. Anyways it was all still very good tasting and I may try freezing some of my own before spring.

    For the members here in Nova Scotia, I am always up for swapping a few bottles of anything. Come the summer all the variety is great in the cockpit. Always lots of people around to share with.

    I did have an issue years ago, where some water got into the carboy from the air lock. Now I use whiskey or vodka in the airlock.

    Shoot, I was going to ask this very question, but the people at the wine store told me to whip the heck out of it. So, I did. Will my wine be trashed? I will leave it anyways, but now I am worried.

    Pumpkin Wine

    Okay, the SG of my Pumpkin wine was 1.040, now it's 1.000, so unless it goes a little lower (still 2 weeks to go in the primary according to the recipe I had) it looks like the Alcohol content is going to be a little low. I guess the next time I try this I will have to bump up the sugar to 2 kgs...

    Whats the oldest bottle in your rack ?

    Not sure yet, it's still in the carboy. I am going to keg most of it this Friday to use in my kegerator. It takes about 12 hours to carbonate and then, Sparkling Strawberry Reisling ....mmmmm I will give an update on Saturday, assuming I don't drink too much of it and forget how to type.

    Unfortunately, I was very tired when I posted last noght that it was the Heritage, I seemed to recall it was a small box. I found the box this morning, it is actually the 10 liter Grand Cru. Regardless I am off to the wine store today to pick up some concentrate like Wade E suggested.

    I have been a Weapons Technician in the Canadian Military for over 20 years. Have bought and sold dozens of weapons over the course of my career. Alas, I have spent so many years with weapons as my job, I am pretty much ho-hum about them all now. It was a fun career though :D
