    Topping off carboy

    I always top off with wine. Buy an inexpensive similar wine. As your stock grows you can use something you already made. If you top it off with juice you will be back sweetening your wine and you will need to stabilize it. No sugar added still has the natural sugars from the fruit.

    Just curious, out of the 8 carboys ... how many different finished wine types? How big is each blend in bottles? I'm thinking next year I may try something similar on a smaller scale.

    Well, this one I know a little about with 25 years in the HVAC business. Actually cooler temps can hold more moisture then warmer. I'm a little confused ... do you want it less humid in the winery? That will dry your air lock even faster. At 60-62% humidity it should take months to dry an...

    Time in Carboy

    Saturday I will be bottling wine that was in carboys for 3 years. Keep the air-locks and free SO2 maintained and keep them cool and in a dark place. I put a dark color child's tee shirt over them to keep light out. Oh, and it taste fabulous. I'm assuming it's a glass carboy ... I would not bulk...

    Yup, no more kits for me. There is some Texas grapes for sale on CL but I think I'm going to wait till next fall. Now that George got out of it I need to find the next closest supplier. My wife signed us up for the Kendall Jackson wine club. This will help keep us stocked.

    Sounds great ... I really thought about blending until I tasted that Merlot. Not to brag too much but it's the best Merlot I have had. There is no way I'm jacking with it.
