    THANKS, I used the blueberries in the primary with all that was sent in the kit. i am about to take the wine off the secondary leas. my thought was to put a few peppercorns in the aging for 60 to 90 days,then bottle.?

    Hello Wine Artists, Has anyone used whole peppercorns in the aging process of Merlot/blueberries to add to the taste palate? It just a thought I had. Intend to back sweeten a little. Age 90 days then bottle.

    Joe, You may remember a Merlot I made a year ago.. I put coffee beans in it to mask a sourly taste. I opened a bottle and to my surprise the coffee was nice way in the back and the Merlot was very nice.

    Hello RocketBee, Moved the Berry Merlot to a Carboy..14th day. 14.5 % ABV.. very dry with a little bitterness. Stabilized and degassed.(not much co2 bubbles?) Put the bubble on it. Will see what time in a bottle does for it. Sugar

    Good call, I'm degassing tonight. ABV is 14%. Mostly Berry Merlot with a distant blueberry backside . The two yeasts..the cotes made fruitier the taste and 1118 work horse finished strong. The WG Kit's direction is very simple.. put down and leave it alone for 14 days..etc. Happy so far.

    RockeBee, I have bottled 4 Fontana kits. this is the second WG Kit. To me the Base stock is better character . so far it is producing better wine to my taste. Subjective at best that's my reason. Sugar

    RocketBee, Yes I always reduce to 5 gallon. I also use the 5 gallon water carboys Walmart sells with an air tight srew top for $7. Very easy to get around with handle. Not the puriest I know but it works for me.
