    FDA inspections

Had another winery owner get a notice that their home based winery would be inspected by the FDA. If a winery has more than 11 employees, the winery must be registered with the FDA under the Bioterrorism Act. Fortunately, we have less than 11, and this over reaching regulation will keep wineries...

    Lable me "frustrated"

Background - Thanks to Julie, who introduced me to fruit wine making about 5 years ago, I make a tasty (so I am told) Cranberry Pomegranate wine. Goes great with folks that get headaches from the tannin rich grape wines as there is little tannins in this wine. It goes over so good, that now I...

Well, this past Sunday we did our first wine show. The show was at the Convention center in downtown Pittsburgh and was featured as a "Women and Wine" show. The promoters told us that they had presold 8000 tickets and that there would be 14 wineries and about 70 other vendors catering to women...

    commercial picking

Let's say that you have a vineyard that needs picked at harvest time. Do you prefer manual or mechanical picking and why? And for those that use either one, about what cost are you looking at for each method?

    natural versus synthetic

Here is a quick article about the cork industry: http://triblive.com/business/headlines/7400833-74/cork-wine-corks#axzz3MY97wmyM Actually, in my wine class, this was an open ended test question on whether a winemaker would go with natural, plastic or screw top. Which one would you perfer and...

    My Grandmother - true story

My grandmother was a spit fire. At a towering 4 foot 10 inches, grandma commanded respect and spoke her mind like many grandma's. When my grandparents came up from Florida to visit, my parents would take all of us out to dinner. At one particular dinner, grandma was in rare form, giving her...

    Early beginnings...

I'd like to ask the professional winery owners a question. When you first started out professionally, how many cases did you produce your first year and how did you determine that number? Starting a winery where there once was none is tough enough, but to try to figure out what type of...

http://triblive.com/state/pennsylvania/5871302-74/wine-grape-grapes#axzz2y2ZV8MEI With the nasty winter, how is this going to affect the current year's crop? Especially in PA/OH/NY where a new winery might need to source juice/grapes??? Winery owners, I'm interested on hearing your take on...

    Celery aftertaste

I made a 3 gallon batch of candy cane from melted candy canes. I then blended with 3 gallons of Thompson Seedless. Backsweetened to 1.020. The wine has a nice peppermint nose and up front peppermint taste, but my wife says it has a celery aftertaste. What could be causing this celery taste???

    How sweet is too sweet?

I need to pick your brains if you dont' mind and I realize to each his own on taste and sweetness, BUT... I have been backsweetening my wines to 1.010, but I checked a nice Niagara that we recently procured and and its at 1.020 which is a little sweet, but not sweet enough to be overly sweet...

    Wine Fault diagnosis

We sat down to enjoy a Rose wine that we had picked up from North Carolina 2 years ago. The wine, when poured, had a brown tint and has a germanium aftertaste to it. I'm still drinking it because it has Muscadine in it (and I'm a big Musky fan). Meanwhile, the wife is now enjoying a Clarion...

    stuck fermentation

I started 15 gallons of lemon skeeter pee in the winery (basement of the house). My wife then turned on the AC which cooled down the house and the basement (winery). Would this cause my 1118 yeast to stop fermenting? My Skeeter Pee went from 1.080 to 1.015 but then stopped. I added more yeat...

    selecting a wine press

Due to speaking with Doug, I now have convinced myself that I need to purchase a wine press. I am considering pressing grapes, berries (when I follow Doug to his elderberry stash) and apples. However, before purchasing, what other questions do I want to ask or need answers to? I just don't know...

    jet or pump?

Santa was kind enough to bring me a Mini-jet and 3 sets of pads for Christmas. It remains unopened. However, given your druthers, would you rather have a mini-jet or allinonepump? I would like to have something that could assist and ensure the de-gassing of my wine, assist with racking and...
