    I wish our Costco sold wine! My son in CT picked up a case of cotes du Rhone Kirkland but by the time he visited us there were only three. Glad to get that many. Next time I told him to buy two cases.

    Not satsuma but we made some from kumquats. Cut the fruit and placed in strainer bags then used water to 3 gallons. Turned out a nice light yellow color. Pretty astringent citrusy taste though. I’m letting it age it’s almost one year aging now. I should try a bottle next month at the year mark...

    I like grape wine but experimenting with other fruit comes a close second. Pear is one of my favorite non grape wines.

    Empty Carboy Storage Ideas

    I have used old style milk crates to make it easier to move full carboys around. Never tried stacking empty ones on the side like that.

    Took pH today 1/2 g can sauv 3.52 Some film at neck of bottle. Siphoned into two 750 bottles added kmeta and corked. Will see how this goes now. Smell and taste is good. here is the neck with film pic. joe

    Thx guys for those pictures. Mine looks similar but not as much film as David’s. The two 5 g carboys are fine so far no sign of the film. The 1 g just developed some film. I will treat with powdered kmeta today. No white wines ever develop it only the reds.

    Recommendation for pH tester

    Anyone use the Apera SX620 pH digital tester? Amazon has the .01 capable tester for $64. Is there one you would recommend in the less than $100 price range for what we do? Thanks Joe

    I think freezing helped break down the fruit. Some got a little brown but that didn’t hurt anything. I pressed the Mesh fruit bags by hand every day. More pears would increase the flavor. We tried taste testing the finished wine with pear extract but that was too flowery for us. finished...

    Pressing Pears

    We did pears cut and frozen then poured water over the bags of fruit. Something like the dragon blood recipe seen here in the forums eg. squeezing the bags in the primary. . It turned out great. It was a 5g batch. We will do it again next month but I plan to use more pears this time and less...
