check out www.colomafrozen.com for single fruit concentrates,, as for fresh fruits and berries , start gathering put in baggies and pop into the freezer to break down you cell walls (more juice).. on country wines (fruits & berries) on your strongest flavor like elderberry or blackberry...

unless you're doing kits which locks you in sortta on your liquids, but from scratch or concentrates , then i always make extra to go into extra airlocked jugs,, in gallon, half gallon and pint jugs, to keep enough of same wine to top off at every racking,, all smaller jugs are 38-400 threaded...

Yup , I'm with @Scooter68 ,, taste at all levels and come bottling time sweeten to taste, then take a SG reading just to give you a ball park target, but on country wines it takes a little sweet to bring flavor, then by taste dial in to taste,,,, personally , I'll bring in just under my taste...

i use food grade 14 gal barrels and brute trash cans, on the bottom you'll see the letters showing that brute trash cans are food grade, home depot is a decent place th find them the lid comes with or at least they did, and,, I'd get the round Dollie bottom , allowing you to move it around...

I've never thought that chocolate sounded good in a wine, but after reading this thread, a tart cherry with chocolate sounds awesome to me now, I'll have to give that tart cherry chocolate a try, but maybe with a touch of cinnamon, this thread is most motivating,,,, Dawg

hum now all my select 900's just says for wines over 2 years, but i got some 6 year old put back with both Flor and nomacroc 900 select, laying side by side I open one of each , each year, both still the same as far as i can tell Dawg

I just went back to my list on my Amazon account, it says Reserva wine closure 47 x 23.5 for wines up to 25 years, 1000 lot $295 i'm going to look at where i order my select 900 selects at Dawg
