    Question About Adding Campden..

    Sorbate doesn't kill yeast, it just prevents them from growing and dividing (just as good, right?) Technically it's considered a fungistat, not a fungicide. AFAIK, you can add SO2 before/after sorbate with no I'll effects.

    I agree with Hector… In general you can adjust acid to taste at just about any point. I recommend you do a trial first, just to be sure.
